Made from locally grown, stone-milled barley flour, blended with fragrant wild fennel and baked over an open fire, this humble loaf has nourished mountain communities for centuries. Long before the tajine reaches the table, everyone is gathered around the warmth of the fire, waiting to share the first freshly baked bread.

Hidden within the peaceful landscapes of Ouirgane National Park, Dar Tassa is a place where nature sets the pace. The menu follows the rhythm of the seasons, shaped by what the surrounding valleys and villages have to offer. Fresh vegetables, fragrant herbs and locally grown produce become the starting point for every dish we prepare together, revealing how the landscape itself influences the flavours of the High Atlas.

Zawyaty
Where Craftsmanship Meets the Table
Every medina has its hidden places. Zawyaty—meaning "My Corner"—is one of them. Behind the walls of this beautifully restored Douiria, Moroccan craftsmanship, creativity and community come together, offering a space where traditions are not simply remembered, but lived every day.
Our partnership with Zawyaty grew from a shared commitment to preserving Moroccan traditions, supporting local artisans and creating opportunities for future generations. Alongside our cooking experiences, this remarkable social enterprise offers workshops in woodworking, leathercraft, metalwork and the intricate art of zellige, while providing local children with the opportunity to learn traditional skills that might otherwise be lost.
Our cooking takes place on the rooftop terrace, where the sounds of the medina drift through the air and the city becomes part of the experience. Together, we'll prepare one of Morocco's most celebrated dishes, the delicate pigeon pastilla, learning the techniques behind its paper-thin warka pastry, sourced from skilled makers within the medina who continue this remarkable tradition.
As we cook, we'll discover the fascinating world of Moroccan spices—not simply for the flavours they bring to a dish, but for their role in everyday life, from wellbeing and healing to hospitality and celebration. Fresh seasonal salads, fragrant herbs and carefully selected ingredients complete a menu that reflects the vibrant character of Marrakech itself.

As we prepare our meal together, you'll cook with ingredients that tell the story of the surrounding landscape. The olive oil comes from Aziz's family's groves, while fresh vegetables, herbs and seasonal produce reflect the rhythm of the valley. Life unfolds naturally around us, with sheep, goats and the family's cow never far away, reminding us that food here begins long before it reaches the kitchen.
As the fire is prepared, we'll make traditional batbout bread together, cooking it over the open flames just as it has been for generations. Warm from the fire and shared around the table, it is one of those simple traditions that brings everyone together before the meal begins.
On the journey to the house, we'll pass one of Tagadirt's oldest natural treasures—its salt springs. For generations, families have harvested this mineral-rich salt by hand, a tradition that continues throughout the year beneath Morocco's dry mountain skies. We still collect our own salt in the same way, using it in every cooking experience as a simple but meaningful connection to the land beneath our feet.
As the meal is shared, you'll discover that the true flavour of Tagadirt comes not from a single ingredient, but from the generosity of the family who welcome you into their home. Some experiences begin with a destination. This one begins with a welcome.
Nestled in the foothills of the Atlas Mountains, our family home is where the story of Ourika Organic Kitchen continues every day. Shared with my Amazigh husband, our daughter, a curious collection of cats and tortoises, and a small herb garden that reflects my passion for herbalism, it is a place shaped by everyday life rather than occasion.
Cooking here is naturally more intimate. Together, we'll prepare seasonal Moroccan dishes while sharing stories, techniques and traditions gathered over more than two decades of living in Morocco. Fresh herbs from the garden, carefully chosen spices and local ingredients become the starting point for a meal that is as much about conversation as it is about cooking.
There is no script, no performance and no set way the day should unfold. Sometimes we'll pause to pick herbs from the garden, sometimes we'll linger over a cup of tea, and sometimes the best conversations happen while stirring a pot or setting the table. Like every Moroccan home, it is these simple moments that often become the most memorable.
